Salmon and Quinoa Recipe

Here is an awesome recipe that I stumbled on to this week and thought that I would share. It only requires one baking dish and a minimal amount of prep.

Salmon and Quinoa Recipe

2 Salmon filets, pre-cut in 5-6 oz portions

1 bag Quinoa mix, frozen section of Whole Foods

1 handful asparagus chopped

2 handfuls cherry tomatoes chopped in half

1 lemon, cut in slices

Preheat oven to 400 degrees. Spread quinoa over bottom of small baking dish. Place filets on top. Chop asparagus and spread around filets and over the bed of quinoa. Cut tomatos in half and spread around filets and put lemon slices over fish. Place into oven and bake for 20 minutes or until fish is flaky and no longer clear. Enjoy!
